I cheated with the pesto as it’s not something I would ever make. But I always keep a jar of it in the cupboard for emergencies.
I’m not a huge fan of jars of sauce, partly because they are misleading in how good they are for you…The are not good for you at all! And partly because I try not to buy anything I can make myself because it’s cheaper to make your own and healthier.
So, as usual when it gets to that time of the week when food is scarce, I had a rummage and use up whatever veg was left, the slightly out of date pancetta (bacon lardons) and the pesto that I found in the back of the cupboard.
- 1 x 500g pack spaghetti or pasta of choice
- 1 pack smoked pancetta/bacon lardons
- 1 small jar green pesto
- 2 cloves garlic, crushed
- part a rescued corgette
- handful of worse for wear mushrooms
- Cooking oil, I used olive oil.
Cook pasta according to pack instructions, drain and leave aside.
While the pasta is cooking, fry off the bacon lardons.
Once golden, add in the vegetables and stir fry for a couple of minutes.
Add in the cooked pasta and stir and then add the pesto.
Mix it all well together. Serve with grated cheese (optional)
