Homemade McDonalds style Breakfast Muffin

I actually meant to put this up weeks ago when we originally made it, but completely forgot!

With lockdown in full swing and us craving a bacon and egg McMuffin, we decided to make our own version.

It’s easy enough to make, doesn’t taste quite the same, but it was super delicious.

What you will need

  • Unsmoked streaky rashers
  • Nice pork sausages (if you want sausage too)
  • 1 egg, poached
  • Cheese slices (we just sliced up some normal cheese off the block)
  • Hash brown
  • English breakfast muffin
  • Ketchup (optional)

Let’s cook!

First, cook up the rashers and sausages. We put ours on the health grill. You can pop the hash browns in there to cook too.

To poach the eggs, we don’t have any fancy poaching things, so we old school it.

Bring some water in a pan to the boil. Remove it from the heat. Crack the eggs into the hot water. Simmer for approximately 5 minutes. This depends on how you like your egg. I usually test if the white is cooked by stabbing the thickest part with a fork. If egg white seeps out, it’s not quite ready.

Remove the eggs from the pan once they’re cooked.

Construct your breakfast muffin the way you like it.

I put ketchup, cheese, bacon then egg and hash brown on top.
