If you struggle with ideas on what to do with your worse for wear fruit, and you hate to throw out food, why not sling them into your cooking?
My kids wont eat bananas when they start to go brown, or apples when they get a little wrinkly. So, I hide them in my cooking and baking and they think they’re getting something amazing!
Of course, they are getting something amazing. And they are also eating the fruit they normally refuse to eat!
So, with my poorly apple today, I made apple and sultana pancakes 🤩
- 4 heaped tablespoons self raising flour
- 1 tsp light brown sugar
- 1 apple finely grated
- 2 medium eggs
- Handful sultanas
- 1 tsp cinnamon
- Drop of milk as required
Put all the ingredients in a bowl, apart from the milk and sultanas, and stir up. If it’s too sticky, add a drop of milk.
It doesn’t want to be runny, so only add a little. Add more only if its still too sticky.
Add in the sultanas and mix well.
Preheat the frying pan or skillet and melt a little butter in it.
Add in spoonfuls of the mix.
Turn down the heat to low, you don’t want them to burn. When the air pockets appear in the top of the pancakes, it’s time to flip them over.
Cook the other side until golden.
Serve warm or cold. I like mine with butter and jam.
