So, once again, we’re using up leftovers.
We’d bought these sausages from the @BreagaghValleyArtisanButchers in the Newpark shopping centre in Kilkenny. They’re different and lovely, but not your regular sausages!
So, cooked them up as you do. And the kids didn’t like them….ah lord! What to do?
So, we told them to pop them back on the plate. And in the fridge they went.
Now, they were perfectly good sausages. Made with pork and a range of herbs and spices..so something a little different. And I personally thought they were delicious.
Anyway, the last couple of days, as you know, have been leftover days…and as usual, I am tasked with figuring out dinners to feeds the family on feck all!
We used up the leftover chicken and pasta yesterday, so today I made sausage pasta, using up the sausages that no one (except me) liked…..apparently!!!
Needless to say that everyone loved the pasta and had literally no idea the sausages were those particular ones 😂
- Cooked, sliced Sausages
- 1 can chopped tomatoes
- 1 x 500g passata
- Drop of oil
- Tablespoon oregano
- Salt and pepper to taste
- 2 beef oxo
- Selection of vegetables (I used what we had in..green pepper, onion, courgette, chilli, garlic and mushrooms) all chopped
- 500g pack of pasta.
Prepare your veg and sausages, cook pasta according to pack instructions.
In a large pan, heat a little cooking oil
Pop in your chopped veg and saute for 4-5 minutes.
Add in the salt and pepper, oregano, crumbled oxo, tinned tomatoes and passata.
Use a little water to wash out the tomato and passata containers and add to the mix. Simmer for about 10 minutes, while the pasta cooks.
Add in the sliced sausage and stir, leaving it to simmer for 5 minutes to allow the sausages to warm through.
When the pasta is cooked, drain off and add to the sausage mix. Give it a good stir and serve with grated cheese and garlic bread! Lush!!
