Savoury Mince

Sometimes we just need a little comfort food, and this is the perfect food for that.

I remember this meal from my childhood. It was a meal my mother used to cook when I wasn’t feeling so well so I have many fond memories of it and really do class it as the ultimate comfort food.

After having a tooth out a couple of days ago, I have been thinking of meals that are soft and are easy to swallow. This one is perfect for this and it’s easy to make plus super tasty.

Ingredients

  • 1lb mince beef
  • 1 chopped onion
  • Half chopped courgette
  • Handful of mushrooms, chopped
  • 2 beef oxo
  • 1 vegetable oxo
  • Dash Worcester sauce
  • Dash brown sauce
  • Tablespoon of mixed herbs
  • Salt and pepper to taste
  • 2 teaspoons cornflour mixed with a little water.

Let’s cook!

Brown off your mince in a large pan with a little salt and pepper according to taste.

Add in the chopped veg and stir fry for a few minutes.

Then add in your crushed oxo, mixed herbs, Worcester sauce and brown sauce. Give it a stir.

Add sufficient water to cover and allow to simmer for around 15-20 minutes.

Just before you serve, thicken the sauce by adding in the cornflour mix, making sure you stir constantly as you add it to make sure it doesn’t go lumpy.

Top tip for crumbling oxo:

To save your hands getting dirty, squish the oxo while still in the foil, then tear off the end and pour it in to your pot.

Top tip for bottled sauces:

Instead of throwing out the “empty” bottle of sauce, remove the lid, pour in a little warm water, put the lid back on and shake. This gets all of the sauce out, thus reducing food waste. Then pour it into your gravy or whatever sauce you’re making.

Serving suggestions

Serve with mashed potatoes and your veg of choice.

Use as a base for cottage pie/shepherds pie

Top jacket potatoes

In pastry as a pie/pasty.
