I’ve spent most of the day in the office today. Apparently working.
All in all, I got about an hour of actual work done!
I started off well. Got up and dressed, walked the dog, sorted the chucks.
Keith made us breakfast of bacon and scrambled eggs with a brew.
Then down to work. I had everything open on the laptop then answered an email, and that was it…completely lost track of doing what I set out to do.
Bullie comes down to work with me everyday. Wherever I go, he’s by my side or at my feet.
I did however, manage to apply for the susi grant…that’s painful and tedious to say the least!
I started researching what I need to do and prepare for my next English Language school interview on the 12th May.
I also had to make a call to the social welfare office about the Covid19 payment which still hasn’t arrived in my account. Well….I’ll put that in another post because it’s a rant!
Then up to the kitchen to make soup. I made celery soup. It’s very easy. I completely forgot to take pictures, sorry. This is a completely vegan recipe.
Here’s what you need:
- One onion
- One bunch of celery
- One cal spray oil or frylite. I use one infused with chilli.
- 3 vegetable oxos
- Salt and pepper to taste
- Chop the onion
- Spray some frylite onto the pan and add in the onion.
- Fry off the onion until soft
- Chop up the celery
- Add it into the pan and give it a mix up
- Add in some salt, pepper and the crushed oxos
- Stir it up, then add water. You want enough to cover it well. I’d say roughly a litre and a half.
- Bring to the boil then reduce heat and simmer for about 25 minutes until the celery is cooked.
- Use a food hand blender to zap it until it’s smooth.
- Serve with a roll or crusty bread.
Then back to work. I tried and failed to get my new headset to answer calls by pressing the button on the microphone, so an email is sent to see what’s going wrong.
Then great excitement as the post man arrived with a package that was simply addressed Smith, so no one knew who it belonged to. I don’t think I’ve seen my lad Marcus as excited since Christmas..well, it was for me 😂 so disappointed is how he left!
Well done to DID Electrical on getting my order wrong! So, I had to get onto them to sort it. I’d ordered a galaxy Tab S5e, and they send me a Tab A. Now I’m to wait another 3-5 days!
I did manage to get an hour of work done. I’m currently working on a short course on Basic Family Law in Ireland for access facilitators.
Finally up for dinner. We made bangers and mash with cabbage and onion gravy for dinner. Lush!
For my son Willem, who doesn’t eat sausages, a beautiful lamb chop.
After dinner, pjs and relax. Bullie, as usual wants to come up for his cuddles, then gives out because my water bottle was in his way!
