Egg fried rice

It won’t taste like the one you buy in the chinese take away, but it’s still really good ๐Ÿ˜

You need only a few ingredients.

This is for 6 people.

  • Approximately 250g of easy cook rice (I pour it in out the bag and guess it ๐Ÿ˜ฌ, but it’s about a quarter of a 1kg bag)
  • 2 eggs
  • Some frozen peas
  • Light soy sauce
  • A chopped onion
  • Sesame oil (or you can use olive oil or any cooking oil, but sesame is better)

Let’s cook!

First, boil your rice until it’s cooked. The rice will absorb the water, so you need to keep an eye on it that it doesn’t boil dry.

It should take about 20 minutes. You can check if it’s cooked by tasting it. If it’s still kinda gritty to bite, it’s not ready. It should be soft.

You might need to add more water as it cooks to stop it from boiling dry.

Once it’s cooked, use a sieve and drain off any excess liquid.

Then run some cold water through it to rinse off the starch.

Rice can be cooked a few hours before you need it if you like, just set it aside until you’re ready.

Next, in a wok or large frying pan put 2 tablespoons of the oil and heat. When hot, add in your chopped onions and stir fry until they’re softened.

Add in the defrosted peas

Add in the eggs and a good dash of soy sauce and stir fry for another minute or so or until the egg is cooked.

Add in the rice and stir, making sure everything is mixed well and the rice is hot throughout.
