It’s quite an easy recipe, there’s not too much to it.
- 2 tablespoon olive or sesame oil.
- 4 chicken fillets – chopped
- One onion – chopped
- 1 carrot finely sliced
- 2 cloves garlic, crushed or finely chopped
- Green pepper – chopped
- Chillies (amount is personal preference)
- 2 chicken oxo
- 2 tablespoon plain flour
- 1.5 tablespoon curry powder
- Half tablespoon cumin
- 3 tablespoon light soy sauce
- Salt and pepper to taste
Put your oil in a large pan and heat. Add in the chicken, some seasoning to taste and cook until its sealed all over.
Once the chicken is sealed, add in the vegetables and continue to stir fry for a few minutes.
Mix together your flour, curry powder and cumin in a bowl.
Boil the kettle and dissolve the oxos in approximately 800ml of boiling water. Add the soy sauce to the gravy mix.
Sprinkle the curry powder mix over your chicken and veg and stir fry for 2 more minutes.
Now for the difficult bit!!
Very carefully and slowly add a little liquid at a time, stirring fast and thoroughly after each addition. If you don’t mix it right it will go lumpy!!
Continue to do this until the powder mixture has been completely mixed in. Add the rest of the gravy. If it’s too thick, you can add more water. Don’t worry if it’s a little runny, it will reduce and thicken as you simmer it.
Serve with boiled or egg fried rice.
