Well, I have to tell you guys, this did not go according to plan. And its perfectly normal to mess things up.
I’ll tell you what happened and how I fixed it!
I sauteed an onion in some frylite (I use a chilli one for soups)
Then I added some chopped broccoli and cauliflower, 2 veg oxos, salt and pepper and enough water to cover.
Cover and simmer on a low heat for about 30 minutes.
When it’s cooked you can serve as is, or whiz it up in a blender. I use a hand blender.
When I tasted it after it was blended it was so bland!! What a disaster.
Well, we try not to waste food here, so it was time to try and fix it to make it edible..
So, in goes another 2 veg oxo, some brown sauce, Worcester sauce and some mixed herbs….and yes! It’s now fit for eating 😍
NB: this soup is vegan before adding the brown sauce and Worcester. It may still be vegan, however I am not entirely certain what ingredients are in brown sauce and Worcester sauce so you’d be best to check.
