Hoisin & Ginger Slow Cooker Pork with Egg Fried Rice

What a fantastic easy dinner. Whack it in the slow cooker in the morning and come back to it in the evening. Just cook up the rice and it’s ready!

It’s not essential to use a slow cooker, you can slice up your pork and stir fry it with the veg instead if you prefer.

Items you will need

  • Slow cooker
  • Sharp knife and chopping board
  • Pan to boil rice
  • Wok or large frying pan
  • Wooden spoon and spatula

Ingredients

  • 4 pork chops (feeds 6-8)
  • Half of each red/yellow/green pepper
  • One chili pepper
  • One large or 2 small onions
  • 2 medium carrots
  • Handful mushrooms
  • Dash Ginger paste
  • 3-4 garlic cloves
  • One chicken & one veg oxo
  • Hoisin sauce, about half a jar)
  • Water
  • Sesame oil (this is nicest for Chinese style meals, but any cooking oil will be fine)
  • Rice cooked according to pack instructions. You’ll need about 3 small cups to feed 6 people.
  • Handful of frozen peas
  • 2 eggs
  • One small onion
  • Light soy sauce

How we will make it

Line the chops at the bottom of the slow cooker

Chop the veg. We like them nice and chunky for this dinner. Add in the veg and the condiments

Add sufficient water just to cover, but not too much as the pork creates it’s own juices.

Put the lid on and place on high for about 5 hours.

Meanwhile, cook the rice according to pack instructions. We usually cook it for about 15-20 minutes until the water is soaked and the rice is soft.

Once the rice is soft, drain it in a sieve and rinse it through with cold water. Set aside until you need it.

After 5 hours the pork will be ready to just pull apart.

Don’t worry if you’re off at work all day and its 8 hours before you get it. It will be just as good.

Once the sauce is ready, you can make your egg fried rice.

Chop up the onion and get your other items ready.

In your wok or frying pan, heat the oil. Then add in the onion and fry it until softened. Add in the frozen peas and stir for another minute.

Add in the eggs and a good dash of soy sauce and stir fry it until it is cooked through.

Once the egg is cooked, add in the cooked rice. Stir fry until the rice is warmed through and egg well mixed in.

Serve your delicious egg fried rice with your hoisin pork on top. Yum
